A professional cooking career spanning nearly four decades a seventeen year ‘stint’ across Europe in the UK, Spain and The Netherlands before returning to Canada in 2003 to join the Culinary Arts department at Camosun College. Operating across multiple hospitality fields in a diverse professional journey, is a keen sense of business and real-world activity that is brought into the learning environment. A belief in strong local food systems for their generation of wide-ranging social and economic benefits has developed an influential network that supersedes food production/service alone.
