Nikolaas was born in Vancouver and raised in Victoria.

Nikolaas got the travel bug before graduating from Camosun's Culinary Arts program in 1995. Upon completion, he left Canada to explore the culinary world abroad. He has since spent the last 18 years outside Canada, where he was employed by some of the best hotels in Switzerland, Germany, and Austria. Working as Kitchen Chef at the Saziani Stube in Austria, he brought his 22 years of passion and experience together to achieve two Chef Hat awards by Gault Millau in 2011 and 2012. The training of Cooks and Apprentices in fine dining hotels, resorts, and spas has led Nikolaas to teaching.

Nikolaas prepares his students for success in the culinary trade with his passion and commitment to learning in a structured environment. Nikolaas has successfully completed his Provincial Instructors Diploma (PIDP)
