FOODSAFE Level 1

FOODSAFE Level 1 is designed for front line food handlers in the food service industry.  Topics include food handling, personal hygiene, receiving and storing food safely, dishwashing methods, and food storage methods. Participants successfully completing the course receive a five-year certificate recognized by the BC Hotel/ Restaurant Association and employers throughout the Province. Tuition includes exam and workbook. Course materials will be handed out in class or are available for pick up one week prior by calling 250.370.4563 or emailing ttce@camosun.bc.ca     Food service is limited on weekends so if your class is on a Saturday, be sure to bring a bag lunch.

Foodsafe Level 2

FOODSAFE Level 2 is designed for foodservice owners, managers, kitchen managers, executive chefs, and others who are responsible for managing for food safety in foodservice establishments. This interactive course focuses on developing a culture of food safety and includes modules on managing for food safety and writing a food safety plan. Note: course consists of two Tuesdays, two weeks apart. PRE-REQUISITE:  1) students must bring proof (certificate) of Level I to class to present to instructor; 2) students must complete an online Food Safety Basics - Review course (not FoodSafe Level 1) through Open School. To register for the online module, go to http://order.openschool.bc.ca/Product/Detail/ps_7540006174  and pay the required $25 fee using a credit card.  You will be given a username and password for logging in to complete the review.  Once complete, please download and print a completion letter for presenting to instructor in class.

MarketSafe (for Temporary Markets) New

MarketSafe is intended for farmers and producers who make, bake or grow foods to sell at local markets. This course will be of interest to market managers, farm gate vendors, home kitchen small scale food processors, and others who may make, bake, or produce food products for public consumption outside of regulated food service establishments.  MarketSafe was developed by the BC FOODSAFE Secretariat in partnership with the BC Association of Farmers' Markets, and is supported by the Regional Health Authorities, the BC Centre for Disease Control, and the BC Ministry of Agriculture and Lands. MarketSafe addresses issues specific to temporary markets, and is not a replacement for FOODSAFE Level One.

Serving It Right

Serving It Right is a mandatory course that educates licensees, managers, and servers about their legal responsibilities when serving alcohol to the public, and provides effective techniques to prevent problems related to over-service. Topics include: warning signs of intoxication, legal liability, and due care of patrons. PRE-REQUISITE: Participants must be 19 years of age or older. Exam and certificate is included in tuition.

Bartender Training

Bartending is a job unlike any other. In this hands-on course, based on standards set by the Canadian Tourism Human Resource Council, you will gain the skills and knowledge you will need to enter the world of bartending. Topics include: setting up the bar, stocking and bar management, terminology, LCB rules and your responsibilities, and customer service. Pre-Requisite: Serve it Right (Server) certificate; must be 19 years of age. Tuition includes course materials.

Professional Cook: Practical Challenge Assessment

Camosun College conducts practical assessments for Professional Cooks working in the culinary industry and looking to achieve the practical assessment component of the Certificate of Qualification for Professional Cook-1, 2, or 3 (PC-1, PC-2, PC-3). Registration in this "assessment only" session does not include instruction and is not intended to replace the course work or practical experience one would gain through post-secondary study and appropriate industry experience. Pre-requisite: candidates must first apply to, and have been approved by the Industry Training Authority (ITA). Cooking ABC's - Spring

  More tasty dishes for those new to cooking! While preparing healthy seasonal cuisine, students learn traditional cooking techniques, presentation and organization from experienced chefs.  No pre-requisites, but bring a 10" chef's knife, a paring knife, a vegetable peeler, an apron, and plastic containers to take home the samples we make each session. Class size is limited and early registration is recommended!
