Everyone loves brunch! Join Camosun Chef, Terry Seed for a fun and imaginative morning. This demo and tasting class will include Flaky Buttermilk Bisquits with Smoked Salmon, Poached Eggs & Hollandaise Sauce, Yeasted Belgian Waffles with warm Chocolate Custard, Buckwheat Crepes with Ham and Gruyere, Crostini of Scrambled Egg & Goat Cheese, with Pancetta-wrapped Asparagus.

Gourmet Pizza!

Join Camosun Chef Instructor, Terry Seed for a fun morning of pizza discovery in this demonstration and tasting class.  Some of the pizzas that will be prepared include a Caramelized Onion, Port and Goat Cheese pizza, a Creamy Porcini Mushroom, Classic Chicago deep dish with Sausage & Cheese, a New York Ricotta and Rapini pie, Smoked Salmon and Creme Fraiche and more.

Non-Traditional Christmas Dinner New

Christmas Dinner without turkey! Join Camosun Chef Terry Seed for alternative choices for Christmas Dinner in this demo and tasting class. Dishes prepared include roast duck pot pie, goat cheese Napoleon with cranberry thyme confiture, baked apple with wild mushroom stuffing, gratin of leeks & Belgian Endive, and pumpkin pots de creme.

Foodsafe Level 1

Required for all food handlers employed in serving the public! Topics include food handling, personal hygiene, receiving and storing food safely, dishwashing methods, and food storage methods. Participants successfully completing receive a certificate recognized by the BC Hotel/ Restaurant Association and employers throughout the Province. Tuition includes exam and workbook. Course materials will be handed out in class or are available for pick up one week prior by calling 250.370.4563 or email ttce@camosun.bc.ca    

Serving It Right

A Serving It Right certificate is required for waiters, bartenders and anyone serving alcohol to the public. In this Hospitality Industry Education Advisory Committee (HIEAC) approved course, you will learn your legal responsibilities, LCB regulations, and how to duly care for patrons. (Note: a special "Licensee" license is also required for special events, contact your local LCB branch). PRE-REQUISITE: Participants must be 19 years of age or older. Exam and certification is included in tuition fee.

Bartender Training

Bartending is a job unlike any other. In this hands-on course, based on standards set by the Canadian Tourism Human Resource Council, you will gain the skills and knowledge you will need to enter the world of bartending. Topics include: setting up the bar, stocking and bar management, terminology, LCB rules and your responsibilities, and customer service. Pre-Requisite: Serve it Right (Server) certificate; must be 19 years of age by course start. Please bring textbooks to the first class (available at the Interurban Bookstore). No class on Sat. May 21 due to holiday weekend.

World of Wines

The World of Wines: Tour de France

Increase your knowledge of French wines as we explore the six main wine growing regions, their climates, soils and grape varieties and other factors which shape their different styles of wine. Gain an understanding of the quality wine system 'Appelation D'Orinine Controllee and terminology used. Tasting of regional wines and French cheeses is included. Participants must be a minimum of 19 years, bring photo ID to class.

The World of Wines: Viva Italia

For wine lovers interested in increasing their knowledge of Italian wine. The profusion of colours, scents and flavours make Italian wines so special. This course will explain the array of native grape varieties, place names, labels, and wineries that can make shopping for Italian wine so daunting and confusing. Wine tasting included. Participants must be a minimum of 19 years, bring photo ID to class.

British Columbia is a young wine region, still developing its character on the world's wine stage, but it has grown. Join us to discover the quality transformation from 'Baby Duck' to international accolades. Whether you are a fan of white or red, you will find something to suit your taste. Wine tasting and local cheeses included. Participants must be a minimum of 19 years. Bring a photo ID to class.

The World of Wines: South Africa New

Formerly little known for its wines, South Africa has asserted itself on the international stage. This course will explore the history and culture of South African wines and show how European traditions have been modified to suit very different conditions of climate to produce great wines. We will discuss the grape varieties, wine-making techniques and wine laws. Wine tasting is included. Particpants must be a minimum 19 years of age. Bring a photo ID to class.
